chia seed puddingOne of the things I love about chia seeds is that I can add it to just about anything. The best recipe I've probably created with them to date is the chia seed pudding. If you aren't familiar with chia seed pudding, what you need to know is that it is quickly becoming a popular health trend. You've probably seen those overpriced Chia Pods in your local health store and been freaked out by their appearance.

There is something offputting about seeing a gel-like seeded dessert sitting in the fridge. Well, to make your first time less creepy I came up with a delicious chia seed pudding recipe that even your pickiest friend will love!

I avoid buying the packaged chia seed pudding because personally I'm not a big fan of the taste. That's why I went on a mission to find one that I could make at home for less money and full of flavor. I came across a delicious coconut & chocolate chia seed pudding recipe that I just HAD to share.

The best part about chia seed pudding? You can have it for breakfast, dessert or both! You won't even have to feel guilty about eating it because it contains Omega 3 fatty acids which your body needs and helps keep your waistline trim.

Here is what you will need:

Ingredients:
3 tablespoons of chia seeds

1 cup of coconut milk
1 1/2 teaspoons of cacao powder
1 tablespoon of maple syrup
1 teaspoon of cacao nibs
1 teaspoon of sliced almonds (or nuts of your choice)
1 teaspoon of shredded coconut.

Directions: In a mason jar or bowl add in the chia seeds, coconut milk, cacao powder, and maple syrup and stir until everything is blended together. Refrigerate overnight or for several hours until the consistency of the mixture is gel like. When you are ready to eat, add in the walnuts, shredded coconut and cacao nibs for the perfect sweet treat.
