Once you see how easy it is to make these mini pizzas, you'll love them. You only need pita bread or any type of flat bread, some pesto, mozzarella and cherry tomatoes, which are in season now. The rest is a breeze and if you prepare them with your kids, they will adore both you and the pizzas!

Mini pizzas with pesto and cherry tomatoes

Makes 4 mini pizzas
Ingredients for the basil pesto

2 cups of fresh basil leaves
2 cloves of garlic
1/4 cup pine nuts or walnuts
1/4 cup of olive oil

Process all ingredients in a food processor until it forms a smooth paste.

Ingredients for the mini pizzas
4 pita breads
1/2 cup basil pesto
1 cup of fresh mozzarella cheese (mozzarella or grated)
1 cup halved cherry tomatoes (or diced tomatoes)


Preheat the oven to 425°F.

Cover a baking sheet with parchment paper.

Spoon the pesto over the bread.

Place the bread on the prepared baking sheet.

Distribute the mozzarella on the bread.

Distribute the tomatoes on the bread.

Bake for 8-10 minutes.
