Try this healthy quinoa pasta with sautéed vegetables & sage to lose weight! (EXCLUSIVE RECIPE)
I'm a big pasta fan. I could eat pasta every day and I'm always trying to create new recipes so my family doesn't get bored. I thought it would be a good idea to invent a dish with a little extra"something"--that extra being bacon, potatoes, sage, and green peas. The result was this feast of textures, colors and flavors. Because I'm committed to a healthy diet, I decided to try this quinoa pasta. By the way, this recipe has no salt: bacon is quite salty, so no need. I hope you like it!
Quinoa Pasta with sautéed vegetables and sage
Ingredients for 4 servings:
1 package of quinoa pasta
8 slices of bacon cut into small pieces
2 tablespoons of olive oil
2 cups of sweet potatoes, peeled and cut into sticks
2 cloves garlic, minced
10 fresh sage leaves, cut into strips
1 1/2 cups of frozen peas
Red pepper flakes
Grated Parmesan cheese
Put the pasta to cook in a pot of boiling water and follow package directions. Once the pasta is al dente, drain and reserve it.
In a skillet over medium heat, add the bacon to fry until golden, about 5 minutes. Put the bacon to drain on paper towels.
Discard half of the bacon fat. Add the olive oil over medium heat and sauté the sweet potatoes, for about 4 minutes, stirring occasionally. Put the sweet potatoes to drain on paper towels.
In the same pan add the garlic to sauté and stir for 1-2 minutes. Add the sage and sauté for 30 seconds. Add the pasta and bacon and mix well. Add the sweet potatoes and peas, and mix. Sauté for 1-2 minutes.
Serve warm with a pinch of red pepper flakes and Parmesan cheese.
