Lose weight with this healthy vegetable casserole (EXCLUSIVE VIDEO)
Easy to make, this vegetable casserole is a nutritious and colorful recipe that will help you to lose weight because it only uses 2 tablespoons of olive oil and a lot of health, oven roasted vegetables. You can use zucchinis, like in the video, or yellow squash, like in the above picture, and serve it as a side dish with meat, fish or poultry.

Ingredients for 4 portions
2 tablespoons of olive oil
4 cups of onions, sliced
3 cups of tomatoes, sliced
3 cups of zucchini or yellow squash, sliced
In a saucepan over medium heat, heat the oil and sauté the onions until golden brown, around 12-15 minutes.
Preheat the oven to 350F.
In a shallow oven dish arrange the zucchini and the tomatoes and some salt.
Spread on top the onion mixture and some more salt to taste. Bake for 45 minutes, until the vegetable are tender and juicy.
Serve hot, warm or cold.
