Hearty vegetable soup great for weight loss! (EXCLUSIVE VIDEO)

There is nothing better than a hot, hearty soup on a cold winter day. I particularly love this healthy, quick and easy to make vegetable soup because it is great when I'm looking to lose some weight. I hope you like it too!

I'm with the three above comments... I watched the video and wrote down the ingredients and process but one step I missed or didn't understand.... the step where the pumpkin, sweet potato and carrots get added to water in a pot... ow much water? can I used veg broth? do I cook them to tender? I am extremely anxious to try this.... THANK YOU!!

Thank you for your comments. Here is the recipe:

Vegetable Soup |  Ingredients

2 Tbs. of olive oil

3 garlic cloves, minced

1 cup of onion, finely chopped

1 cup of celery, finely chopped

½ cup of red bell pepper, finely chopped

1 cup of tomato, diced

2 quarts of water

2 cups of pumpkin or butternut squash, pealed, seeded and diced

1 ½ cups of sweet potatoes, pealed and diced

1 ½ cups of carrots, pealed and diced





  1. Make a sofrito with the olive oil, garlic, onion and celery. Once it’s tender, add the red bell pepper and the tomatoes.
  2. Put the vegetables to boil in water. Add the sofrito, some fresh cilantro and cook covered, until the vegetables are tender, about 20 minutes.
  3. Salt to taste
  4. Serve with a sprig of cilantro.
